Then it was our turn to try the famous broccoli buns. I’m really bad at eating coarse vegetables because I don’t like them very much. Therefore, of course, they had to be tried, hoping that I could eat a little more broccoli!
Ingredients of Broccoli Buns
- 1 broccoli head (245 grams)
- 2 eggs
- 2 egg whites
- 20 grams of fiber REMEMBER (approx. 3 tablespoons)
- 1 teaspoon baking powder
- 1 teaspoon salt
- 50 grams sesame
Preparation of Broccoli Buns
The goal is to get all ingredients blended and stirred into a dough. For this purpose, a good blender or food processor can be used, but we chose to use a stick blender as our food processor is broken.
Finely chop the broccoli and come in a bowl
Add eggs and egg white and blend to a fine mass
Add the other ingredients and let the dough rest for 5-10 minutes so that the fibers can absorb
Brush buns on a piece of baking paper and shape them with your fingers as well as you can
Sprinkle if necessary. with seeds or grains (We used some flax seeds and sunflower kernels)
Bake them in the oven at 175 degrees C for approx. 20-25 min. after how high you make them

The balls were okay. They very much like the bottom of a vegetable pizza if you have tried to make it. However, I think they lacked some consistency and some more “goods”, so next time I think I’d rather combine a regular rye bun with some broccoli or spinach.
